Nhân bánh: Cho bột bắp, 150ml sữa tươi, 30gr đường trắng vào nồi, khuấy đều nhỏ lửa cho đường tan hết. Khi hỗn hợp sánh lại, cho 20gr bơ lạt, 1/4 muỗng cà phê vani vào, khuấy đều. Để nguội hỗn hợp trên, cho vào tủ lạnh cho đông lại.
Cho men nở vào 45ml sữa tươi ấm, khuấy đều để 5-10 phút men sẽ nở ra như gạch cua. Cho tiếp 360gr bột mì, 20gr sữa bột, 50gr đường trắng, 45gr kem whipping, 1/3 muỗng cà phê muối vào, trộn đều.
Làm tan chảy 45gr bơ lạt. Cho bơ lạt vào hỗn hợp bột, nhào bột thật đều tay. Cho thêm 20gr bột mì áo nhào cho đến khi bột không dính tay.
Thoa chút đầu ăn lên bột, đem đi ủ khoảng 90 phút cho đến khi bột nở gấp đôi là được. Nhào bột thêm một lần nữa và chia bột thành những phần nhỏ. Vo tròn từng viên bột. Cán bột mỏng ra, cho nhân vào giữa, gấp các mép lại. Vo 2 đầu bánh cho tròn lại.
Xếp bánh lên khay nướng có lót sẵn 1 lớp giấy nến. Khởi động lò nướng ở nhiệt độ 160 độ C trong 10 phút. Cho bánh vào nướng khoảng 30 phút.
